WINE HISTORY AND TASTING
Winery story:Maison Galhaud Our "LEON GALHAUD" sparkling white wine is carefully brewed in the underground cellars and stone caves of the famous 13th century historical site "Tower of the King" in Saint-Emilion, using traditional champagne-style winemaking methods .is a fine wine to enjoy on a romantic evening between couples or with friends.
This LEON GALHAUD sparkling white wine is produced in the center of Saint-Emilion, in the catacombs of the Tower of the Kings, built between the 12th and 13th centuries.
Fermentation and aging are carried out in cellars under constant temperature of 12°C and humidity of 90% throughout the year. The second fermentation is to add sucrose and yeast to the base wine, bottle it and seal it with a crown cap. Fermentation takes place slowly during this stage, which lasts about 9 months, creating a fine and regular foam. Sediments formed during the secondary fermentation need to be removed and our sparkling wines are shaken on racks to keep the necks down. Depending on the type of "cuvee", there will be daily manual shaking for up to 5 weeks.
Tasting Notes:Moderate acidity and fruity aromas are well balanced. The bubbles are fine and persistent, and the taste is refreshing and elegant. The aroma of grapefruit is accompanied by white peach and mineral flavors.
Pair with food:As an aperitif champagne, it is quite suitable to accompany cold meat dishes, cheeses or fatty seafood. It is a very good sparkling wine
